Soybeans have been long recognized as a plant food that, when compared with other plants, is relatively high in protein. Protein is the very reason why soybeans have been historically called as the meat on the field or meat without bones. But, only recently, have researchers taken a closer look at the protein content of soybeans and arrived at some fascinating conclusions.
Even if soy proteins are relatively low in certain amino acids (protein building blocks), than animal protein like those found in chicken, eggs or milk, once soy protein has been introduced into the diet, it can give you the same degree of nutrients as other proteins.
Recent studies suggest that few of the unique peptides in soybeans include defensins, glycinins, conglycinins and lunasin and are known to provide us with health benefits, such as improved blood pressure regulation, better control of blood sugar levels and improved immune function.
A study was conducted in the college of medicine at the University of Kentucky, where they analyzed the impact of consumption of soya beans on the cardiovascular system. What they found was a decreased risk of coronary heart disease, when approximately 30 grams of soy protein was consumed on a daily basis. Decreased LDL cholesterol was found to be an important part of this lowered risk.
Also, when we think about antioxidant rich food, the first food products that come to mind are vegetables. But recent studies and research show that anti-oxidant that is found in soy, such as the genistein, increases the intake of other antioxidant enzymes, such as superoxide dismutase, glutathione peroxidase, catalase, and glutathione reductase that you will find in other food products such as vegetables.
